Saw this recipe on Pinterest (shock shock). Couldn’t be a better recipe because it involves tilapia (which is always in our freezer) and spices (which are always on our rack)! And while our house still smells like all the spices, it was probably one of the best ways I’ve ever eaten tilapia. The spices coat the fish in a smoky flavor and allows the tilapia to flake perfectly. Will and I enjoyed this recipe with some more skillet fries and dinner looked so good, I completely forgot to take a picture! However, we will make this again without a doubt, so I will include a picture from the next time we eat it. Of course, if you just click on the link, you can see what it looks like, but more importantly, you should just find out what it tastes like! So good and such a better way to eat tilapia than other recipes because it really packs in the flavor.




Ten-Minute Blackened Tilapia (adapted from Gimme Some Oven; serves 2)
Tilapia filets
Olive oil
1 tbsp smoked paprika
2 tsp thyme
1 tsp cumin
1 tsp oregano
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
1 tsp chili powder
1/2 tsp ground black pepper
1/2+ ground red pepper
Tony Chachere’s Cajun Seasoning to taste

Mix dry ingredients together in a small bowl to create blackening powder. Moisten the sides of each tilapia with either water or cooking spray and coat with blackening powder (approx. 1 tbsp per filet). Heat 1 tbsp oil per filet in a skillet over medium-high heat. Once oil is almost smoking, add filets and cook for about 3 minutes per side or until fish is opaque and can be flaked with a fork. Remove from pan and serve immediately!
