No no no friends. Not Mug night at the Leafe. Dessert in a mug night. Not the same and arguably not as good, but definitely necessary for the nights you run out of ice cream-those are always the most tragic. Anywho, this little treat can be created with the things you probably have stashed away in your cupboard and just a little milk. The most crucial part is what you put in the middle-I prefer Nutella (but who doesn’t prefer Nutella for everything?!?!) but peanut butter or chocolate peanut butter works just as well. This recipe works as a quick little treat for those days when you have nothing else on hand. Just be careful not to burn your hands on the mug when you take it out!

Cooking Notes: We love doing this with Nutella, since that is usually what we have on hand. Peanut butter is second choice for us (or a chocolate peanut butter, which we occasionally have on hand). Sometimes letting it go less than 1 minute will get it gooey-er!

Chocolate Mug Cake (adapted from Budget Bytes; serves 1)
2 tbsp all-purpose flour
2 tsp unsweetened cocoa powder
2 tsp sugar
1/4 tsp baking powder
A pinch of salt
1 tbsp veggie oil
2 tbsp milk
1 tbsp peanut butter (or Nutella, chocolate peanut butter, jam, anything slightly gooey)
A handful of mini chocolate chips, to garnish

In your mug, stir together the dry ingredients (flour, cocoa powder, sugar, baking powder, and salt). Make sure there are no clumps. Stir in the veggie oil and milk until the mixture is smooth. Drop a tbsp of peanut butter (or other filling) into the center and push it down into the batter. Microwave on high for one minute, then sprinkle chocolate chips on immediately upon removal. Enjoy!
